In the everyday story, which many of us have encountered or rediscovered, is the common question: "What am I cooking today?"
It's not like that happened to you, the reader, to wonder what else you're cooking, out of the habit of cooking or you simply want something to try another culinary recipe that satisfies you at that moment.
Sometimes you have the ingredients at home or it is easy for you to procure them and then all you need is an idea or let's say a recipe that satisfies you from a culinary point of view due to its qualities.
I cannot deduce what you will feel or think about my proposal, it is certain that this culinary recipe is one adapted by me but which my family enjoyed with pleasure when I prepared it for the first time.
Although the original recipe and the one I came up with were two completely different recipes than mine, the result lived up to my expectations.
I didn't need a lot of ingredients to make this recipe, which made everything easy.

Sweet Potatoes |
INGREDIENTS:
200 grams of purple or pink sweet potato, it can be another type of sweet potato,
100 grams of tapioca,
Salt to taste
Palm sugar
Grated coconut or coconut powder
METHOD OF PREPARATION:
Wash the sweet potatoes and boil them in a steam bath.
When cooked, they are left to cool, peeled and then pureed.
Mix tapioca and salt to taste into the mashed sweet potato.

Balls are formed from the obtained dough, which are stretched and filled with palm sugar, then they are returned to the form of balls or balls, whatever you want to call them.
Boil a liter of water in a saucepan. When the water has boiled, reduce the heat to the stove, and add the balls of dough prepared as I specified later.

When the dough balls rise to the surface, remove them with a spatula, and add more until you run out of sweet potato dough balls.
Let them cool and drain for a few minutes.
Meanwhile, steam the grated coconut, if using fresh coconut, and add a pinch of salt.
The coconut will sit on the steam bath for about 5 minutes, then let it cool in a bowl before using.
After the balls and the coconut have cooled, we roll them in the coconut.
If using coconut powder, place the dough balls, which have drained well of the liquid and cover them with coconut powder.
This is my recipe for Sweet Potato Balls with Palm Sugar Filling and Coconut Glaze. I used coconut powder but for sure the design and taste is better with grated coconut.
